www.cutoutandkeep.com
is a collection of sewing and crafts, many of these projects were later released, and tutorials, and there are many stuffed animals on the site! You could use a tutorial and modify to fit your needs.
I usually start with a very simplified version of the creature that I am, then a few details until it looks like I will be able to record on paper. So imagine, as I have made the pieces together (a good way to cut a piece of paper and see if there) Start with a sample matches cheaply from scrap fabric or about to be taken to him, then take the real thing!
